Usage 80% flour, 20% VIKORN 20/80, 3% fresh yeast (or 1% instant yeast), 2% salt, 54% water (approx.). Mix the ingredients to a well developed dough. Dough temperature 27°C. Scaling weight 450 gr. Round up. Intermediate proof 30 minutes. Mould in desired shape and decorate with Vikorn Decor. Final proof 70 minutes at 75% R.H. and 35°C (cut in V form before baking). Baking temperature 240°C. Baking time 35-40 minutes (bake with steam).
